Lion’s Mane Mushroom, Hericium erinaceus, has a delicate crab or seafood like consistency and is a native species, found on hardwood trees in a wide range of North American forests. Outside of it’s forest habitat, Lion’s Mane is a rare find, due to its tendency to bruise with handling, it just doesn’t hold up through multiple links in the food supply chain. The Lion’s Mane are grown on hardwood chips and sawdust, supplemented with organic grains.
